Weights & presentations
- Light lamb, 5–6 kg carcass
- The Italian and Greek trade specification. Milk-fed to light-grazed, whole carcass, chilled.
- Light-medium, 8–12 kg carcass
- Diaspora wholesale and foodservice. Whole, halved or quartered.
- Heavier carcass, 14–22 kg
- For cutting-room programmes and further processing.
- Primal cuts
- Legs, shoulders, racks, loins, breast and neck; bone-in or boneless, vacuum-packed or bulk-boxed.
- Live export
- Live lambs and sheep, welfare-compliant transport, TRACES intra-Union certification. Flagged as subject to current animal health status.
- Frozen programmes
- Blast-frozen carcass and cuts where a chilled shelf life does not fit the lane.
Seasonality
Lamb is a calendar trade. Book early against these peaks — supply tightens and farmgate pricing moves 4–8 weeks ahead of each.

Italy, Spain, Croatia. Light carcass demand, tight delivery windows.

GCC and diaspora. Peak per-unit value; halal certification essential.

Autumn flush
September to November — best availability for heavier carcasses and cutting programmes.

Packaging & logistics
- Chilled carcass on hanging rail or in Euro-standard meat boxes; cuts vacuum-packed in cartons on Euro pallets.
- Temperature-recorded chilled or frozen transport, FTL and groupage, through hauliers we use repeatedly.
- Metric units throughout — kg per carcass, tonnes per shipment.
- Incoterms typically EXW, FCA, CPT or DAP; DDP considered per destination.
- Indicative lead time 7–21 days from confirmed order, longer across peak weeks.
